Oatmeal-pumpkin porridge

If you are looking for a tasty breakfast or dinner, this oatmeal-pumpkin porridge will be a good choice. Boiling oatmeal in almond milk makes it creamy. Pumpkin and spices add a touch of autumn.

Ingredients

  • 250g quick-cooking oatmeal
  • 0.5 L sugar-free almond-vanilla milk
  • 100g pumpkin 
  • 1 tablespoon of brown sugar
  • 1 teaspoon of cinnamon powder
  • ½ teaspoon round or grated nutmeg 
  • ½ teaspoon of ginger powder

Prepartion

Pour water in a pan and bring to the boil, add diced pumpkin. Boil the pumpkin until soft. You can boil it also in advance.

Place oatmeal in a blender and blend until in a flour-like consistency.

Pour milk in a medium pan, add pumpkin and spices – cinnamon, nutmeg and ginger. Boil stirring occasionally until smooth.

Stir in oats and brown sugar. Reduce heat. Boil for 1-2 minutes until thick, stirring all the time.

If the porridge becomes too thick or you like more liquid state, add a bit of water.

This amount is intended for 4 persons however it depends on your appetite.
